It may look a little daunting, but I promise this one's easy! I wish I could say that this cake is one of those treasured family secrets, but its not. This recipe is from Kraft Foods. Its all theirs. I'm telling you its the best recipe they have!
Here's what you'll need:
1 pkg. yellow cake mix
1 can {15oz.} Pumpkin, divided
1/2 cup milk
1/3 cup oil
4 eggs
1-1/2 tsp. pumpkin pie spice, divided
1 pkg. {8oz} cream cheese, softened
1 cup powdered sugar
1 tub {8oz} cool whip
1/4 cup caramel ice cream topping
1/4 cup chopped pecans
Pre~heat your oven to 350 F. Beat cake mix, 1 cup pumpkin, milk, oil, eggs and 1 tsp. pumpkin pie spice in a large bowl with mixer until well blended. Pour into two greased 9 inch round pans.Bake them for 28 to 30 minutes or until a toothpick comes out clean. Cool for 10 minutes then remove from pans to cool completely.
Now, we're going to make the filling.
Beat softened cream cheese in a bowl until creamy. Add sugar, remaining pumpkin and spice; mix well. Then fold in the cool whip.
Now its time to put this baby together! Using a serrated knife you are going to cut each cake layer in half horizontally.
Put your first layer {the bottom of the cake we just cut} on your cake plate or stand. Then add 1/3 of the filling and spread it evenly.
Next you have the dome shaped layer {the top of your cake}. I recommend using your serrated knife to just take off the peak so that your layers lay flatter.
Place this layer on and add your filling. Do this with the other two layers {except don't trim your top layer}. Once you have your filling in, pour the caramel sauce on top and sprinkle with pecans. If you are making this to take somewhere or for company that has yet to arrive let me suggest that you wait to pour the sauce on top until just before serving. Over time the sauce causes the cake to break down and get mushy.
